This aged cheddar is a constant on the Pure South menus since 2004. The Healey Family have milked cows in this stunning, remote valley for a century. John and Lyndall developed the cheesemaking on the family farm and won every award they could with this classic, traditional cheddar.
The flavours are unique to Pyengana Valley. Aged for 12 months in a cave like environment to create the award-winning rich and full flavour.
